What does hanging do?
How do you 'hang' a dead rabbit?
Do they 'hang' meat in hot climates?
Do putrefactive bacteria really improve the taste of meat?
I've read recipes for 'jugged hare' and dont think I'll try it!

The ears were from a yearlying doe. The head got cut off, and tossed aside, as the deer were being cleaning. The lab must like the taste of deer brain, as there was not much left, but enough for a pix.
