Questions/advice for a gin run

Post by Colin202 »

Thanks for looking, just wondering if anyone has any feedback on what I'm about to start up here. I've done mostly whiskeys for the most part. Ujssm, nc hooch, Jessie's all rye, etc. but the wife likes her gin and at some point gotta keep her happy too. Here's what I was fixin to do, with two questions. I've been reading a ton just a couple grey areas.
Here's what I got going on and my set up
I chose a recipe that's corn rye a little sugar and malt extract. I was looking at remus's recipe but didn't want to do an all sugar wash. I'm using a 5 gl pot still(I know that's not optimal but its what I got)

Was gonna do a normal strip run, no botanicals. No cuts
Re charge at 40% and botanicals in a mesh bag rigged in my onion top, run still no cuts
Re run with OUT botanicals make cuts as normal

Questions
1. I assume this being in pot still needs a triple run, again assume!
2. After second run before third is it messes art to bring back down to 40% ? Can't find this info anywhere I looked.
3. I guess I could leave the botanicals in for third run just seems like overkill
4. I've been using us-05 for my yeast, its too cold here right now for my dady I think, any thoughts.
5. Any need the filter? Figured a run through a carbon filter might strip flavors

Well if you read this far thanks, preciate any input

Hey mate, I've done a couple of gins now, so no expert, I hung a botanical bag in the neck of my boiler and it worked great. I use a plated column so I would sugest maybe just 2 strip runs and then your gin run. I was surprised how much flavour came.through using just a botanical bag!. The citrus flavour came through strong but balanced out nice after sitting a while. I found diluting to 48% tasted so much better than 40%. I did a Bombay type. Good luck, it was fun doing something different and alot easier than I thought.
Here's to alcohol, the cause of, and solution to, all life's problems.

1. # of runs is up to you. Suggest you try two, then three, maybe four, and see what you like best. Using a pot still, I'd say at least 2 runs.
2. Not sure what a "messes art" is, but you ALWAYS want to run your still with no more than 40% ABV wash inside of it. Any higher and the risk of explosion goes up.
3. Again, up to you. Try one without it, try next run with it. Which tastes better to YOU? (I have made no gin thus far, only whisky and vodka)
4. I always use bread yeast, no thoughts.
5. If you see anything floating, you can always run it thru a t-shirt (no, not the one you just took off!!) or a coffee filter. Charcoal will strip flavor.
