The second run of wash for gin is in fermenting or not. That pesky Cabernet yeast is not cooperating. We did a boost with some champagne yeast but not much is happening. Cold weather is coming this week. Lows will be in the single digits Fahrenheit for 3 nights. We have aquarium heaters in both 250 gallon totes. Both totes are now on wooden. pallets too. I have the heat in the building set at 68 degrees Fahrenheit. I think we might need electric blankets. At this point in time we can't build a separate temperature controlled room. The bourbon yeast we use for our white whiskey seems to do a little better. There weren't any fermentation issues with batch 2 of white whiskey. Any advice, words of encouragement, sympathy, or prayers are welcome.
