Why, when you add calcium carbonate to a stalled mash, does it start up like a freight train goin down hill with no brakes???

CaCO3 will raise the Ph. If it's down to 3-3.2 the yeast won't like it. Bumping it up to aound 4 will help.

Just to add jkhippie's response ... when you add calcium carbonate to an acid the reaction produces water, salt, and CO2. So it's likely that part of that freight train is the CO2 from the reaction, which would happen even if your wash was completely without any viable yeast cells.
