making the cuts

Post by shizam »

I am curious about how ruff other members unaged whiskey is right out of the still. I make my cuts between 80-65%. That's what my uncle taught me. But I have noticed that the tails (65-50% alcohol) are significantly smoother. Would it be a bad idea to expand my cuts more towered the tail end? I know that there are harmful chemicals in the heads. But would about the tails?

Your problem is you are making cuts by ABV. Smell taste and feel.

That why we recommend collecting in smaller jars. So you can go through and find the best place to make those cuts.

There are some good flavors in some tails. But it doesn't take much to ruin a batch.

I have them same issue with tails I tasted them all the way down till almost all water seemed to be all flavor no terrible smell or taste. Actually sweet and tasty.. I don't touch my hydrometer till it airs out for a day or so and I make my cuts.
Those were all ujssm and sweet feed. But I did just do actual corn mash allgrain and that one I can say there was a cut off point that the tails were not so good. Guess it all depends on the mash and stilling setup.

I'm also interested in what others have to say.
