Switched from my normal yeast to Dady Red Star Distillers yeast. I kept my lifelong cornmash recipe the same as always. This is was my 3rd run on a new sourmash. The previous 2 runs were fine so the only difference is yeast and maybe the ferment time.
1. Ferment time took apprx. 2 weeks with my two 10 gallon buckets around 75° constantly. Never had a sourmash take that long ever.
2. My new corn I put in was the same as the previous mashes. Same brand of sugar also.
---Here is the problem... Early into the heads and all the way through to the tails you can catch a hint of something like peppermint. Its not a "peppery" taste like I have had a few times, but like a diluted candy cane taste. I let a quart air out overnight and it still had the subtle hint of peppermint. The only variable was I switched yeast. If anyone has had this problem give up a post please.
...Dont say save it for Xmas...the old lady already threw that at me..lol
Is your life worth.."Better fix that next time"????
