ABV for rum ageing
What's the consensus on abv for ageing rum? Is 67.5 too high, should I shoot for 62.5 to 65 or stay at that? I just put about 2L of Panela Rum in a 3L oak barrel at 62.5 but I was thinking of going a little higher and using some charred oak balls with my latest Panela run. My idea was to put a specific amount in a pint jar at a certain proof, throw in the oak and then give it to a friend and have it so that all he needs to do is fill it with water to get to 45% after a few months, then just filter and drink it.
