Well, I started off making sugar washes, then went to a thin mash with corn, then corn/rye, then all grain corn and then finally all grain barley. I thought I was improving at each step and had many "scotch drinker types" comment on how good my cracked barley and toasted oak was after sitting about 6 months. (this is balvinnie, or mortlatch etc...no I made it..REALLY??)
After all this...the wife said the other day "what was that stuff you used to make I really liked" :roll: So I made a batch of corn thinmash and "that's it, THAT'S what I like" :evil: I mean really? REALLY? I do an all grain corn/rye with toasted oak and peppercorns in it which everyone says is awesome and you like the "quick&dirty" corn/sugar mashbill??? REALLY??? :evil:

Second, when I built my first still I was 14 and I only had a little blue hardcover book about "making your own alcohol fuel" to go by. Yes my aunt and a couple Uncles ran stills but they lived about 6hr's away and they wouldn't of told me anything anyway because I was a kid. What I did worked...kinda..but I used brass fittings, lead-free paint to paint the inside of the propane tank I used as a still (didn't want a rusty steel still..why I thought to paint it I'll never know, I did know to use lead free paint lol) Basically I made it with what I had on hand and safety was whatever I thought was safe.
Compare that to today with the internet and sites like this, there is no comparison to the safety/quality/ease of manufacture with correct tools&equipment. Completely different mindset on why and how to make homemade likker.

Third, Like I said, I knew a couple aunts/uncles who made stuff, heck making wine and beer at home was illegal then too, but that was it. A bottle of shine showed up at a party and everybody had to try it. (and gag and cough and say how much it burned :roll: ) Now, I know a dozen guys who make their own and 4 of them I've met in the last year alone. I now have three guys asking me to build them a still. This is definately becoming mainstream.

Fourth, I used to get all giggly when I'd run a batch and hide out in the garage with the door cracked because of the propane burner, concerned with the noise, concerned with the smell, etc. Now..my last two runs I did with the garage door open and me in the doorway in the middle of the afternoon because it was so damn hot out. I'm using electric with my cooling water circulating from the pool.(heats the pool about 1-2* per run) I was on duty Friday night (I'm in the army) and while talking to a couple of military police argued that it is against the law and they argued that making shine is legal as long as you don't sell it, that's why you can buy the airstills at the local brew shops. Whatever, I know it's illegal, but even the cops here are convinced it's not. So now, I won't say I advertise it, but I certainly don't hide it anymore. The downside is, I run low, I make some more, like making bread or jam, it's no longer a "oooh I better sneak around". I don't sell, only make for my own consumption and the "excitement" is gone. It's almost a job instead of a hobby now. "Honey we're getting low on bailey's, can you make some more? Actually we need more whisky too" "Yes dear" :relaxed:

Anyway, been gone a while (it's racing season, I'm too busy to be sitting on the computer for hours on end) thought I'd throw some stuff out there. Or..ramblings from an old fart. :lol:
Numerous 57L kegs, some propane, one 220v electric with stilldragon controller. Keggle for all-Grain, two pot still tops for whisky, a 3" reflux with deflag for vodka. Coming up, a 4" perf plate column. Life is short, make whisky and drag race!

What have I learned over the years..... hmmm.... Ive learned no matter how much hooch you bring to a get together, it will pretty much get dranked up gone by sunup, or until everyone is laying about sleeping in contortions like a plague blew through.

The ones that have abused the privilege I have afforded them find out that I am 'fresh out' and don't know when I might make more .

Jimbo that's hilarious! I told her I got her a pearl necklace for her birthday, she just had to lay on her back to get it, thinking I was a pretty funny.She answered, ooh, you haven't titty%$%^ed me in a while. :shock: OK, point for her... :thumbup:

And you reminded me of another one;

fifth, always cut to 40% because for some reason people think they should chug free whisky. I handed out 500ml mason jars for Christmas one year at 50%. Everybody started popping the lids and tilting it back! I'm like, WTF??? You wouldn't chug from a bottle of store bought whisky, why would you chug mine? AND, it's at 50%!! About 20 minutes later everybody's dropping like flies so I quickly gathered all the likker up again and dumped it in a pitcher and announced I'LL POUR THE DRINKS!
After that, 40% and a strong word of caution to all. :thumbup:

I think the reason is its SMOOTH! Nice cuts make for a very easy drinking likker. 2 bottles went down FAST at our company picnic Friday. The first sip from a newb to homebrew is apprehensive. Then the face lights up, a smile comes on, the words, "wow thats smooth" spill out, and the second sip is a Polish Swallow (glug). Sorry no offense to the Pols here, my dad (not Polish) use to say that to my mom (Polish) whenever she wanted a sip of his soda or whatever.

Some things I've noticed ...
Friends that for some reason (or the obvious) only come over on Sunday.
Friends (and family) that think its easy and plentiful.
Friends that get upset when you (accidentally) run out.
People at the checkout always asking, "what's the jars for?" (with a smile). :D

I bought a 50lb bag of cracked corn and it was full of bugs, took it back and gave the guy shit, said I wanted it replaced. He argued it won't hurt animals, I said it'll hurt me I'm making whisky! He just said oh, sorry and gave me another bag. (which I checked on the spot)

I still won't ever go back there, there's another feed&seed about 10 minutes from my cottage, I normally go there anyway.
Numerous 57L kegs, some propane, one 220v electric with stilldragon controller. Keggle for all-Grain, two pot still tops for whisky, a 3" reflux with deflag for vodka. Coming up, a 4" perf plate column. Life is short, make whisky and drag race!

GB,

If you have a chance to get corn meal by the large 50 lb sack, its another thing Ive learned over the years. Cracked corn is large chunks, dirty, questionable anti-fungals and 10 bucks a sack. Corn Meal is a nice fine grind (mash efficiency), clean as a whistle food grade and 15 bucks a sack. Its a no brainer. I get it from a restaurant supply with a tax card. Not sure how to find it in the large sacks as a consumer off the street.

Hmmmm... actually, I am signing up with Restaurant Depot tomorrow because my wife has an llc. It has cheap sugar and a certain birch beer that is getting more difficult to find.

So what are the challenges to using corn meal? Does it become a thick nasty glob on mashing? What about uses for ujssm? Can you use it? Does it "spend" like cracked corn? I'm intrigued on the thought of this.

I happened to walk through a store the other night and saw a 5lb bag of corn meal. Thought, hmm interesting. Never thought of trying to get a 50lb bag of it though.
