Interesting flavor....hint of pineapple in rum

Post by Havenor »

Being a newbie I've been trying different things, combinations. My light rum, almost neutral spirit, needed a little help so I did the usual raisins, oak, some charred oak, molasses, etc, and I tried a few different things in combination. One of the more interesting flavors came from dehydrated pineapple, which comes with sort of sugar crust on it from the supermarket. I got it as an impulse buy months ago but no one in the house would eat it, way too sweet. It's like the pineapple gets soaked in a sugar solution before they dry it. Anyhow, on a whim I threw a couple small chunks in one of my pint jars with raisins and oak.....really intriguing. The pineapple flavor after a couple weeks is just subtle enough, not too sweet, and the pineapple didn't dominate. A definite winner IMO.
