does ph matter ?
Hi everyone - I'm about to make a mash with sugar and yeast. I was wondering if ph is important/matters. I notice the yeast packet doesn't say anything about it.

Although they are hard to screw up, turbo yeasts generally deliver inferior results. No yeast should be pushed above 12%, even if the package says it can do much more.

You are planning to make a wash. Mash involves grain...
That turbo pack has everything you need in it. It has acid to adjust the pH in it.
pH is very important. Yeast like an acidic environment and many other 'problem' organisms don't. By adjusting the pH of the wash down you make an environment that favors the yeast that make the ethanol.
