Chard Maple bubbling

The chard maple sticks in the shine have been bubbling for over 5 days.
At first I thought the shine was soaking into the wood, but after this long some thing else must be happening.
The bubbles are small and back lighting is needed to see them, but there's a steady stream.
The toasted oak in the same gallon jugs isn't bubbling.
I'm about ready to char a piece of oak and throw it into one of the jugs just to see it bubbles also..

Very interesting shadylane, there must some sort of reaction taking place there. Something present in maple wood that is not in oak. Organic acids react with alcohol to produce esters but I don't know if any gasses are given off in the reaction.

Time to do a little reading.
I'm goin the distance...

maple is much denser than oak and lacks the open pores. It will release its air much slower.....my guess

I couldn't find anything that would explain it. But I'm no chemist.

Charred white oak doesn't bubble like the charred maple does ?
