Aging a Honeydew brandy?
I just ran some Honeydew. The smell and flavor of honeydew carried over really well...much more than the strawberry, peach, and blackberry washes I've done. I have read where melon wines and brandies are typically not "the best" and while this brandy carried over tons of honeydew flavor it still has that ehhh taste. This is my first melon brandy so im not real sure what to age it with? I have some apple chips that im using on some peach that im really liking a lot so far. Any other tips or advice is welcome

I'd let it sit till the chips come outa the peach then add them to the honeydew. Then hide it for a year.
