Stainless pot still and tower / use copper coil?

Getting into distilling brandy and looking at a stainless pot set up for the boiler and still head. Dont want to argue about that point. I would however like to get copper involved due to what I'm reading about the benefits. Could i simply run condensed runoff through a copper coil to get the effects i'm looking for or does the copper have to integrated be condensation occurs?
