OK, I'm EXCEEDINGLY happy with UJSM (thanks a whole lot for sharing that with us Uncle Jesse)... and have 2 going happily into their 3rd run based on fresh corn, and will be starting a cracked corn one soon having finally found a place to purchase the grain.
However.. I am very keen to push onwards, and try something else. I ended up distilling the UJSM's with my reflux still, with the packing stripped back, which worked very well (well, I think so), giving a very tasty 70-60% product, before I switch to keeping tails.
So what I really want to try next, is a fruit wash, to try out my pot still with. Given a 25 litre wash, how much fruit/sugar should I be looking at. I plan to do a tour of the orchards when I am home for XMas, and was hoping someone could give some recommendations for a first time fruit mash recipe.
The recipes I read in the tried and true section that really took my fancy was a peach one, but I'm not sure I can get hold of peaches cheaply... berries are kinda the most common at this time of year here.
