MOST BASIC Corn Mash Question

If I do an all corn mash, (using Briess Flaked Maze) and malt, why can't or "ought not" leave the solids in the fermenter during the entire fermentation (as opposed to filtering it out and leaving a wash.

Intuitively, I see this as providing more sugar for the yeast to convert. Then just do the filtering of solids and racking after the ferment and before the run.

Sorry for such a basic question, but I've been wondering.
