A 15.5 gallon beer keg would be ideal. Your timetable will need to change... 2-3 hours is not enough time.

Kind of still will depend on what you want to make.

Whiskey, Rum and flavored drinks: Pot Still

Vodka or neutral spirits: Reflux Column

I run a pot still, it taskes me about 18 hours to run a gallon. I run real slow.

I run a potstill column on a 15 gallon keg,heated with propane,and it takes me 3 1/2-4 hours to run a 12 gallon wash.That gives me about 2 gallons of 60-65% booze.
A short section of 2 inch copper for a potstill column works good on a keg.
Just build a big enough condencer to handle the output.I run a 30 inch leibeg on my short column.

if size is no problem then build what wineo said but in 3". then i will know if i need to clean up those 3" elbows i have! :P my potstill is 2" now. as for the best answer it depends on what you want to drink and how much heat you gonna use. i dont see 1gal of drinkable spirit in the time frame you are looking for. unless you drink swill.

On my truck I have about 2' of 3'' cooper , 4' of 2'', 10' of 1 5/8 ,1", and all 90s, 45s, on all size exp. 3" but no Keg. Made small 3gal still out of 1''5/8 . 2 ft column 3ft 1'' 1/2 condenser 3/4 lieboy but never ran yet. Think the 3gal will work ? Made playing at lunch at work one day  , but no scrubber yet.

It should work fine, just do a water test run to make sure you have no leaks first, then run some cheap wine or something to clean it out before you keep any booze. You wont get alot of booze with a 3 gallon boiler.I have a friend that runs a 3 gallon pressure cooker with a 1 1/2 inch column in his apartment on the stove. Its my old first still. He does well with it.
