Oaked Sour Mash AG

So after just over 8 months of patience, the day finally arrived.
This started as a true sour mashed AG of local sweet corn from here at my place, Rhar pale 6-row, and DADY. No sugar added period.I combined a few spirit runs from my all copper pot to make 5 gallons, cut and blended to 50 %, ran it through a short column of sugar maple charcoal, then into the barrel it went. Now mind you, I live in a climate with very hot and high humidity summers, and winters with just a handful of nights below freezing. I sampled every 10 days, and it has been through all sorts of profiles, but today, all I can say is wow! Drained the barrel, proof checked it and found it dropped to about 45%, I assume due to a very high humidity summer. Lots of vanilla, incredible smell, very very smooth, just a touch of sweet.Just wanted to share a pic with you all. Working on a True peach brandy now, just a few more days till it finds the copper,
I'll let you all know how it goes.

Anytime you want Appalachian, just say the word, I got plenty, and runnin pretty regular these days so I can gift some for the holidays. I Love my heritage, got a 5 footer flying out front right now, along with what looks to be a soon replaced State flag. Sad that history is being purged.

That's just beautiful...I tried it many a time...by 8 months the barrel has been refilled 2 times. Good work! Ya keep that up Jack Daniels and Co. will put a bounty on ya..
Patience....the early bird get's the worm, but the second rat get's the cheese.
