Best Yeast?

Does anyone have any suggestions for what kind of yeast to use. Only thing I've ever used was alcotech 48 hour turbo yeast but I've heard it wasn't the best for corn liquor or sweetfeed shine.

Bakers yeast here. Dirt damn cheap and it works. That or an ale yeast.

A lot of that depends on what you are fermenting and the temps you have to work with. For whiskies I would say most here use bakers yeast . I use Red Star and keep it at around 80 to 84 degrees. Many others use Safale us-05 for their whiskies when fermenting at lower temps, but there are many more yeasts out there. These are just the 2 that I have used personally.

I like the EC1118 cause it finishes dry and I don't need to keep my fermenter warm.

Baker's yeast? Like Walmart bought redstar packs? If it works well that seems like a good... Cheap... plan.

i like fleishman's bakers yeast. ferment a t room temp, no heat added around 68-70 sitting on concrete. most average SG's finish and clear in 6 days...ready to strip. i have been getting a pound ($8) to last about a year. but that's because i ain't never made no whiskey, and i ain't gonna make no whiskey either.

i really want to try US05, but you think i can remember to stop and buy some... :roll:

Well this is promising seeing as how I just pitched some bakers yeast (Fleishman's) for the first time and was worried I'd have to keep it warm.

thats a 200L barrel, i do put the 6 gallon ones up on a table. on concrete the small buckets take a couple more days.
i have one of those radiant tube gas heaters about 15' away from the barrel, don't know how much that helps.

I'm using Fleishman's bread yeast for the Sweet Feed. Mine ferments in an 8 gal stainless steel milk can in the house which stays at 75 degrees F. Year round.

Sam's Club... 2 - 1 pound vacuum bricks for ~$5.00... A lot cheaper than the sachets in the grocery stove...

I'm a huge fan of US-05. Ferments very clean. After airing out, I'm not sure the fores even smell that bad. Very little esters. It's pricy but to me it's worth every penny.

how do these bakers yeasts go with basic sugar and water ?
room temp here lately is between 28c and 38c,colder at night [about 24c]
but will be getting colder soon.


i think i'll have to run a brew off until i get this grain mix sorted.

Bakers yeast is a really good base point, if you know how that works at your heat we can work from there. Best is really only good if you know what you want and where you are. My best yest might not work for what you need. Your best might not be what I want in my environment.

It's all about heet. What Temps are you fermenting at? Figure that out and we go from there.

Imo baker's for grain or sugar ferments at 80*-90*, EC-1118 for fruit washes at 60*-70*.

80f = 26.5c to 90f = 32c which is the temp range up here at the moment.

gotta go shopping tomorrow [120km round trip] so ill pick some up then.

I use 1 packet (sachet) for a 5 gallon ferment. Sometimes, I buy 3 packets at a time (because that's the way you get them at the grocery store). Then, I split them between two 5 gallon ferments (1-1/2 sachet each).

Yeast will reproduce (often called "budding") until the required cell count is available to transition into the latent ferment phase. It is good because the young, freshly "budded" cells are healthy and hungry. And they'll smell very bready like fresh bread dough.

To promote healthy budding of the yeast, you need proper areation in the initial wort, as the reproducing phase is aerobic. But when the yeast transition into active fermentation, the process becomes anaerobic (without oxygen) and the yeast expire CO2.

Summarizing, 1 to 2 teaspoons per 25 liter wash should be good. And remember, baker's yeast likes it warm (80 to 85*F).

And don't forget to rehydrate your dry yeast prior to pitching. Use warm tap water only, not a sugar solution. You can rupture the fragile cell walls due to osmotic pressure if you use a sugar solution to rehydrate.

How much you use is up to you... The yeast colony will remain in aerobic phase as long as possible to build the cell count but most here tend to over-pitch to reduce lag time... I pitch a lot more yeast into the same size wash, but that's just me... I've been known to pitch 1 tbsp (3 tsp) per gallon (4 - 5 liters) of wash... A good rule of thumb would be a single sachet or ~2.5 tsp for a 25 liter wash... Maintaining a constant temperature and providing enough nutrients is more important than the amount of yeast pitched...

You are not going to find the brands these guys are talking about
Use Lowens that most aussies do and 50g is ample for 25 to 30 ltrs , not keen on that tandaco sachet yeast crap myself but you can get the 280g cans of Lowens red in any supermarket of grocery shop for around $4. This yeast is actually bred on a strata of molasses and so is perfectly suited to any sugar wash or sugar head mash, like I said elsewhere for all grain it will work but there are better options and for fruit DO NOT USE IT, it doesn't play nice with fruit flavours

Stock feed shop and get cracked or rolled maize (not the rolled shit they put molasses in unless you want to make a sweetfeed deal) or in pet shops (costs way more) and get the crushed corn chook food. Generally you can by the meal in supermarkets but its not so cheap.

couldnt find crushed corn,corn meal or flaked maze.[none in emerald,qld] :roll:
so i ran off a couple drums of sugar with bakers yeast and added nutrients.....
very poor output.yield was much lower,but still @ 86%alc/vol.

anyhow....

like with my target shooting,ill keep trying get the scores up..

How far is Capella, Obrian trading stockfeed and fodder supplements If that doesn't work out go see CQ Ag services , they are stockist of Laucke mills products so you caould order Laucke's cracked or rolled corn through them :thumbup:

Well actually Capella (Alfa Aurigae) is much further away than that. It's about 42,5 light years from here. Might be closer from your place :D
