pot stilled rum w/ bananas
Ran off some rum with a bunch of chopped whole bananas in the thumper. Skin and all. I'm using a double thumper setup with wash in the BK and thumper 1. The distillate was yellowish and a faint banana flavor.Liked it a lot white . Made and excellent base for spiced rum.

I was considering doing this for a small batch on my next ferment. About how many bananas did y'all end up using? I've stock piled some over ripe ones in the freezer in preparation but I couldn't decide between throwing them in the ferment, boiler or thumper. I was thinking of making a banana slurry for the thumper so it's easier to clean.

I think that, if you have the choice, the thumper would be your best bet. I just do the boiler because I don't have one.
I try to use at least 5 in the boiler, and I've gone as high as 10. If I had more, I would use more. Love me some banana.

Thanks Raketemensch! I agree with yah on the thumper. I'm waiting on turn of Jimbos bourbon to finish then I'm trying it!

I'm sittin' on about 10 gallons of panela rum low wines.
Contemplating adding fruit to the boiler for the spirit run, age white hopefully to have a nice Christmas drop.
From what I am reading here apparently the fruit flavor comes over the pipe, is it much?
Was thinking of pineapple and bananas - never done this before so you who have tell me, will the rum taste like the fruit or just have a bit of fruitiness?
Also - how do you clean all that out if you're using a keg as a boiler? that's a mighty small hole to get that mess out of the boiler?

So they infuse the rinds for a week and then redistill.
Separately infuse the fruit in a dark rum then mix the two and age for an additional three months.
i have everything I need for this but the pineapple.
I can buy that at the grocery store, then go for it.
Dilemma #1
If I proceed cautiously and only make up about 5 gallons and it turns out to be awesome I will have wished I had made more.

Picked up the pineapples on the way home today, need to let them ripen.
Meanwhile anyone have ideas about how to go about doing this?
Having an open top aging vessel would be great but all I have are oak barrels and glass carboys.
I also have two SS kegs for boilers but these have the same problem as the barrels and carboys - small openings.
Sure I can get the fruit into these things that's not the problem, it's getting everything out after that is the issue.

Little over 2 gallons in mine with no handles makes this ole boy nervous. I carry it like a baby...lol
Once I finish my electric conversion I'll picking up one of these. Thanks

Now the plan is to make up around a bit less than 7 gallons of the pineapple rum and age it in the glass "barrel".NeckStiller wrote:I like your find better!

I can also use one SS corny keg I've got so I can infuse the 2 different parts at the same time.
This will certainly be interesting if nothing else!
