I saw that yesterday as well. Lot of truth with a bit of hyperbole but a pretty solid piece. I think his minimum 5-7 years until profitability are a little extreme but other than that, he does a good job of pointing out pitfalls and roadblocks that folks can expect to encounter in opening a distillery.

Rick Stillwagon is pretty prolific in the craft scene, so maybe it was just a explanatory mistake.
But hes talkn about maintaining a certain head temp, which we all know Can be done with proper rc adjustment.
I do it every run, run a single batch up to 180°, and hold it there..How many likkers are deciferred, temp cuts.
But folks that don't use or believe in thermometers will never understand, or admit it works because they're limited to running only likker without therms.
But we're talkn craft techniques here, and ALL distilleries, craft or full blown, use thermometers (on columns esp).
A flute without a thermometer is like a guitar missing a string, it'll never get used to its full potential..
And you'll never know what different music or likker you coulda made..Sure theres folks say they don't use the speedometer in their car too, but....
Ifn you can't run likker every whicha way, therm or no therm, then you're way behind, not even knowing the specifics of your own product.
