I'm making an evolved habitats rum, heavier on the molasses than usual. I threw 15 peeled bananas into the boiler. OMG does it smell good in here. Painfully delicious.

I was also stupid and left the boiler on full for too long, and probably got some puking. Once I noticed this I cranked up the reflux and turned down the heat so I could pull the condenser off and clean it out -- another nice benefit of doing a dad5000 corrugated pipe condenser is that I could slide the tubing out, clean the copper pipe completely with some scotch-brite, then re-assemble it and just turn up the heat again.


Still brown, tho.

I'm running it through the flute, so I really didn't want to do strip/spirit runs, but it looks like I might not have a choice now?

I've never added this much stuff to a boil before, is it possible that the brown is coming from the bananas and not a puke?

I'd guess some from column A and some from column B...
Ok, just had to insert a little humor in there!

My guess is you are getting both, I am not familiar with the size of boil you are doing though.
15 bananas in a 5 gallon batch is a lot more than if you were running a 15 gallon batch.

Possibly a “banana puke”....

Best to put the bananas in the thumper, not the boiler.

Flutes dont usually have thumpers.

Just got me thinking - wonder what adding those bananas to a gin head attached to that flute would produce ??

I've run with very ripe peels in a Carter Head to try making banana essence but captured little banana throughout the run. Other varieties, or whole fruit, may be better.

A flute is never the wrong tool for a job.

Although a thumper would be nice... Once I have the steam kettle running, I might run the flute into a thumper.

I should've left more headspace and run it slower, y'all are right. But hey, I have a cleaner condenser now, right? Little victories?

In the end I just ran it as a stripping run and took it down to 20% in a huge jar for next time, minus the fores. So it became a pot still with a coupla plates.

Now I'm trying to decide if I should do a 1.5 run with the other 12 gallons of wash or just strip it and do a spirit run...
