How's this aging approach
I will be making some whisky with a light liquid malt extract. I'll start with 2 50 liter washes. After my spirit run I will age it for however long I need to in gallon jugs. I know scotch and Irish whiskey is aged in used bourbon barrels and used sherry barrels. I chared up some toasted oak sticks and dropped them in some bourbon to age themselves and then act like a used bourbon barrel as much as possible. I then took some medium toasted oak sticks and am soaking them in some sherry. I'm wondering if anyone has done this and how many sticks needed? I dont want to over oak and dont mind if it sits for the time required. I'm in no hurry on this this, just want something good. One stick of each per gallon? 2 of each? Or an odd number, I have no idea.

How big are your sticks? I use 2 1X1X2 sticks per quart jar.

850 I use 2oz.wood per gallon...seems to work fine

I just measured my sticks and the surface area of each is between 10-13 square inches. I guess that would be approx 5 per gallon.
