I've seen several posts where people used birch to age. What kinds of birch do you all use?
I just harvested a black sweet birch. It has a super strong wintergreen smell. I cant imagine that being tasty in a whisky, unless you're into that sort of thing.
Currently toasting/drying it. Im hoping the wintergreen smell develops into something more palatable or even goes away completely leaving me with all those nice wood sugars.
I'm still on the hunt for some white birch to cut down. Anyway, let me know what you've used, at what toast or char level, for how long, and what flavors it has imparted. Thanks

I have. How do you think I found the several posts lol The vast majority do not mention type of birch. Its kind of ironic - I've used the search function before on Google, as well as other forums, only to be taken to a thread such as this one and see someone suggest that the OP uses the search function. Simply saying that without providing any helpful information degrades the quality of the forum.
Rather than comment on 20 threads asking each specific person which type they used[some of which were long dead] I made a singular thread specifically about birch. Seemed like the right call to me.

Damn, no mention of what kind the commercial alcohol company uses. I did however, get in contact with the people that sold him the aging kit. They said they use yellow birch and mentioned they think black birch could be used since it contains a lot of sugar. It seemed that the inner wood had less wintergreen smell, or at least was a bit more earthy.
Anyone else care to weigh in on what they've used?

I have used paper birch. On it’s own and lightly toasted it gave a mild flavour. I also added it to one bottle that had a little of everything it. Just for fun.
