Hi, just joined because I have found this site useful over time.
I am sure I will have questions eventually, but there is enough info already posted to sink a battleship.
My interests are primarily in malted-corn based all grain mashing.
The sourcing of suitable corn to malt yourself, and a valid / reliable process.
I am curious about aging product.
I am starting to try that.
But I want to age the very best of what I make.
Sampling Buffalo Trace White Dog, which (IMO) is not very nice, i will be more picky in what i attempt to age.
I all grain mash and ferment on grain.
Do not have the equipment to still on grain, but will work up to that.
I never seem to have enough horizontal surfaces, clean, sterilised containers or time.
I use a power controller on an electric still, that allows me to run slow where necessary.
Copper Alembic, with metallic coating added by the yeast when running hot.

I wouldn’t be so quick in saying only aging the best you make. Sometimes aging a not so great product can make it a great product. What’s the harm in trying to age something that isn’t great? What are you going to loose? Maybe a little time? A little storage space? But you could gain a pretty nice tasting product.
And I don’t know about you. But I don’t want to be drinking my not so good stuff while I am waiting on my good stuff to age.

Simple Lil' Pot Still, no temp guage, no carbon, no scrubbers, nuthin' fancy. Sometimes use a thumper, sometimes don't.
