3rd fill 5 gallon barrel

Post by 850stealth »

I have a 5 gallon barrel that was a once filled with bourbon from a distillery in the US, it's a barrel mill barrel. I filled it with rum about 14 months ago and will be dumping it any day now. I'll be making some "scotch" with maris otter and honey gambrinus malt that I want to put in the barrel. I can either just dump in straight in after it's made, rinse with hot water and let the water sit a bit or rinse and add a bit of bourbon and a small bit of sherry to season it before adding the "scotch". Has anyone done this?

I know I'll need to let it age alot longer since the barrel was used twice but I dont mind that. I have some all malted barley whisky that's just over a year old in glass that has been on oak that I can top up any losses over the years without adding young new make stuff.

Empty, wait a day or two, and fill. Carry the rum finish into the single malt like a Balvenie 14 year Caribbean Cask. Delicious 😋

If you like rum (I'm not a big rum drinker) and like Ballinger, you will really like it. It's got a really pleasant rum finish.

I think I paid $85 American rubles last time I bought any. It sits quietly at the back of the bar top, hidden behind other bottles so people don't encroach on it.
