Observations on aging corn likker in glass jars

I am still learning this subject. I will say that is amazing what a difference a couple of months of aging does for the taste of the final product. I leave the jars open air for 24 hours and then just set them aside for a couple of months. I can tell a positive difference in the final product.

I can attest the same. I had forgotten about some likker I made this past winter and discovered the cuts jars in the garage earlier in the summer. I recall the original product to be good but "hot". I opened and blended the best of the product upon discovery and it was amazing the change, even without any oak. Time is truly your best friend.

The curse of this hobby. You really don't know how good your product can be until months or even years in the future. Does not work well with the instant gratification crowd. So I see volume as your friend so you save some to age for years.

I don't know about months or years but, i do know a week or two in glass does wonders. I can't make enough to keep the stuff around any longer than that......yet

Luckily I am able to produce more than I can drink, so my plan is to churn some out before winter sets in. Let all of that age and nip at my supply from spring. And when spring comes back around, fire up production. Time is your friend-

I've started putting away a pint jar of the stuff I deem ready to drink, just for the purpose of reflection long down the road.
I'll start running again in late September with a 30 gallon neutral wash, then start making AG whiskey again all winter. Hopefully, I'll get another 12 gallons put up or more before it gets too warm in the garage to ferment.

I found even a week or two makes a difference. I always let my whites “rest” in a can for a week or two before bottling.
