I spend the last days trying to figure out some kind of masterplan to coordinate my coming rum runs. Normally I am the kind of impulsives person who just starts a project and tries to figure out stuff along the way. This hasn’t always worked out great in the past.
Therefore I would love to share my rough plan of what I’m about to do with you guys, and use the chance to ask some questions.
The end product I would wish for would be a bold pot still Jamaican style rum with a moderately high Ester level (think Wray and Nephew for example).
1. The Wash
100% feed-molasses wash in a 4:1 ratio with 30% sterile dunder + epson salt and Vitamin b complex capsule. Fermented for about 3 weeks at 28 c with fresh pressed bakers yeast. Hot dunder gets dumped on the old yeast bed for each subsequent wash. No infected dunder in the fermenter.
2. The live dunder
I will collect a part of the dunder from my first stripping run to start a live dunder barrel. I planned on putting some freshly cut organic sugar cane in the barrel and leave it for some time. Later on I plan on infecting the barrels in a controlled manner with the following:
- Propionibacterium freudenreichii (producing propanoic acid and puts the holes in your cheese along the way, available in cheesemaking stores)
- Clostridium Butyricum (Butyric acid producing bacteria, found it in some probiotic japanese medicine)
- Acetic acid producing bacteria ued for making vinegar
- Yoghurt starter cultures for lactic acid
3. The stripping run
Nothing special here - full power stripping run. Collect dunder for infected dunder barrel, use rest to start a new wash.
4. Spirit run
Here it gets tricky. Load the pot with low wines and infected dunder. Take a hearts cut, collect tail till 20% and use them in my next spirit rum.
So here are some of my questions:
- what is the Ideal abv I should dilute my low wines to before the spirit run
- how much infected dunder should I be adding to the spirit run.
- What do I do with my heads?
