Tar coming out of my aging barrel
So I’ve been aging and AG whiskey in a 10 liter barrel. It’s been about a year and now the barrel is oozing out what looks and feels like tar. I tasted it thinking it may be sugar. I got a whiskey,wood and bitter. Any thoughts

It’s on the lower half of what I would call the front and back.

It's likely caramelized sugars and char from the wood. 1 year in a small new charred barrel might have a bit of a strong barrel flavor for some people's taste preferences, but as long as your monitoring flavor, I'm sure it'l be fine. Here is a barrel of mine, it's not first use, but you can see the tar like substance squeezing through the staves on the barrel head.

I did taste it to be sure. It seems smooth. Wonder if it’s time to drain it

The Alcohol/ ethanol evaporates off leaving any other compounds in the spirit behind, things like sugars , tannins from the oak, that is the gummy stuff.
Keep an eye on the level and top up if need be.

scrape it off and throw it back in the barrel. thats flavour and colour there.
