My first "shandy" I think or aka "fortified wine" Apple Cider

Post by Hybrid pot still »

I did my first shandy or fortified wine I do believe lol. Its pretty tasty I think. Using "Musslemans 100% apple cider juice, not concentrate or preservatives in it, cost way more by the gallon by a few bucks but the only way to go on store bought juice. 8 a gallon where I'm at.. anyhow, I add 9 pounds of sugar this time on 5g plus some malted corn, I wanted my usual 12 to14 but only had 9lbs plus I figure the sugars in the juice would make up for it. I did 2 ferments, one without malted corn, I ran the malted one, with thumper charge with half gallon cider juice and a quart of the malted grain wash with it and rack the other ferment and let settle to clarify more but added my corn cider run, came off worm at 173, tempered to 120ish, I didn't account for temp for distillate on my alchometer on second reading, half and halfish, more on the cider side than clear likker side but not much, 20%abv damn tasty. I want to ferment and strip a few, double distill until enough for a 3rd flavor run with this and try to this. I couldn't taste anything from the thumper, as much as I charged it, besides corn at the end. Very good for a single run.

What yeast did you use?

Following because I'm fooling with jacking Apple juice, roasted apples, brown sugar and oatmeal.

My best friend Mr. Flechtmans lol, I've learnt finally to quit spending money on other stuff, if I need the yeast to be stronger and thrive longer and harder I add yeast nutrients and booster/Energizer.

Musslemans had a really good regular apple juice that is really good, it's the first I used. The brown sugar sounds good, I I might try that with mine and the roasted apples, I would really like to have more apple notes in mine and that roasted apple sounds really good to add to the thumper possibly

I just noticed that Musselman's is $5.88 here at WalHell, only about a dime more than what I used before.
I used EC-1118 because it was about a buck for the packet & I was only using one.

About 3 -4 years ago there's a thread about peaches somewhere.
I replied that I had seen a tv show about gourmet popsicles. They guy said the secret to having so much "peach taste" in theirs was they roast their peaches to bring out more caramels & flavors.

I made a 2 gallon batch using the SWAG method.
1 gallon Cider
1 gallon water
1 3 pound bag of apples
1 2 lb bag of DARK brown sugar
1 pound oatmeal + amalyse

Frozen it down to most of the 750 bottle you see.
It's been about a month but my problem is while it tastes like alcohol it's registering zero on my hydrometer.
The original sugarhead had too much oat & apple to get an OG reading
I kept the "dregs" as I drained and I have a gallon if I decide to do another batch.
