A Swiss-German multimillionaire chemist and entrepreneur, Dr. Dolf Stockhausen, claims he can make a fully matured Irish whiskey in one week. If that seems outlandish, that’s because it is. Legally mature Irish whiskey must age a minimum of three years, but most experts agree most aren’t much good until at least five years of maturation.
Stockhausen’s weeklong whiskey process revolves around removing tannins from the wood and using specially treated chips of traditional whiskey barrels. Stockhausen claims this technique gives whiskey the same flavor as it would receive if aged in a barrel. He called time “the curse of whiskey making” in an interview with The Business Post. To get around that curse, he proposed to use his patented aging technique to create Irish whiskey. He’s confident his technology can make up for a lack of age.
But the Irish government doesn’t appear to be as enthused with Stockhausen’s technology, as The Business Post reported Sunday that Stockhausen has been told he cannot produce his rapid-aged whiskey in Ireland.

Well, it's rare that I ever agree with a government entity, but here's a case.
You can't rush time. You can speed up colorization and release of tannins, but maturing a good whiskey takes time.

Brian over there at Lost Spirits claims to have COAs that illustrate that it is possible to expedite a reaction that will replicate the same composition as a spirit that has been traditionally aged.
I like his rum.
I just watched the boys over at the Whiskey Vault review Brian's whiskies and they seem pretty excited about it.
Is it the best? Subjectively not.
Is it the worst? Objectively not.

From the article it seems like he's just aging on chips. It's not exactly innovative. This is more about getting free advertising than creating an actual quality whiskey. The Irish whiskey folk rejected it based on their rules on whiskey. He knew it would get rejected and he knew he could use that to get publicity. "HEY LOOK I'M A REBEL!!!!!"
Of all the people that have done rapid aging I think Brian at Lost Spirits has done the best job so far. I haven't personally tried it but from the reviews it looks like it's not a gimmick like most of the rest. His process isn't just one thing, it's multiple things that add up.
