own recipe for hot buttered rum.
the way i make it is on a per-cup basis, so that throughout the winter if someone wants a cup, i can make it up in about a minute. if you
want to make a larger batch (say for a christmas party or something) all you've gotta do is adapt this recipe.
WILL NEED:
whole cloves
ground nutmeg
ground or stick cinnamon
butter
a dark rum of your choice or your own making
microwave or stovetop
coffeemug
optional: ground jamaican allspice
PREPARATION:
First I mix up what i call "the batter." Put a stick of butter in a bowl and microwave for a few seconds, just until it softens a bit, but hasn't started to melt. remove the bowl and add about 1-2 teaspoons of ground nutmeg and 1-2 teaspoons of ground cinnamon. (I like mine to kick, so i use more, but some prefer less. I'd start with 1tsp of each, you can always add more later if you like.) Stir this mixture well, then add a cup of brown sugar and stir again. This is your batter, and you can make as much as you want at a time to prepare ahead. Refrigerate, and this stuff will keep all winter.
STEPS:
1) in a standard coffeemug (12ish ounces) place 2-3 whole cloves, and add about a cup of water.
2) set the microwave for about 3 minutes, and watch the mug. When you see the water start to boil, make note of the time remaining, and stop the microwave in 30 seconds. After you've done this often enough to get a feel for the average time, you should be able to just set it and forget it.
3) carefully take the mug out of the microwave and discard the cloves. the water should have a faint yellowish color, and a mild clove smell.
4) add 1-2 tablespoons of batter and stir well. if you've got the right amount, the mixture should turn cloudy and start to smell divine.
5) add 1-2 ounces of your rum and stir well. the flavor of the mix is strong enough to handle more rum, but i've found that about 1.5 ounces gives just the right taste.
6) (OPTIONAL) You can top the mug in various ways if you like. I like to take canned whipped cream, and spray on enough to cover the top surface of the drink. then i sprinkle on a cinnamon-sugar mix.
This drink is my absolute favorite thing in the world to warm up during the winter. granted, our winters here in south louisiana only last about 3 weeks, but it's still nice. also, the girls love it

If you want to make larger batches, it'd probably be easier to make the clove-water on the stove. i'm usually only making 2-6 cups at a time though, so the microwave works for me. after the first clove-water cup is done, i usually start mixing the finished drinks and just have one of my friends continue boiling the cups for me. yay, division of labor!
