Hey guys,
I’ve used a handful of different yeasts since starting this hobby, ranging from ale yeast, bakers and DADY. I’ve had good results from everything and will likely branch out to some more estery strains for my whiskey experimentation.
All of them have been clean producers, but DADY provides something extra, a distinct cherry flavor that flows into the hearts, regardless of recipe. I consider this very welcome and has given me a natural preference to use it all the time. This yeast is fantastic, rips through a ferment very quickly, price is very reasonable and gives me a little character that I love. The cherry note reminds me of something I detect when drinking Buffalo Trace.
Curious if you guys have had the same experience with this yeast.

I've not used it, but would consider it for a bourbon mash, as I like cherry-heavy profiles.
Buffalo Trace is more grape than cherry for me, but its definitely in there.
