any of you cooks ever use dried pozole? I bought a bag from the mexican market and am wondering if there are any tricks one should know. Its red, huge kernels of corn. They are close to a 1/2" across. giant corn, I believe its called cacahuazintle.

edited to add... I'd like to ask chefdaniel but I think I really pissed him off... :oops:

has it bin converted? from what I know pelados is a soup/stew made from "hominy" (corn that has the hall removed with lime)
cacahuazintle is the corn.(hominy) some is bought converted and some not.(also used in tortillas.

yeah, I'm eating it now... it came out great. I assume it had been converted with lime... It just came in a bag that said pozole... maybe something about it being red...I had never seen it dried like that, and never seen that large of a corn kernel. I washed it and set to boiling it for about 4 hours. It swelled up and started to break open and I added the pork and onions... chile and garlic later and cooked it down to a thick stew. Good stuff. I was a little concerned about what I should do to rinse the lime, but everything seems ok.

good for you ,,Did not know,, you can buy either way,, used to make " hominy" (same but US name) long time ago with hard wood ashes , field corn. and the branch. (not hard to make)

General instructions:
soak overnight, drain, boil the hell out of it!
Seen yellow and blue, but never red before - it's a native food where I live...

In the same general category, but less well known, are chicos. They are whole kernels of sweet corn, dried over a wood fire.
When dry, it looks like there's nothing to them, but if you throw a handful into a pot of beans before cooking, they swell back up and look and taste almost just like a frozen corn kernel .
