Hi fellow distillers... another Kiwi here, in Otautahi.
I've been distilling for a few years now and enjoy the fact there are always new things to learn and try.
Started out with a 25l Essentia reflux just making sugar wash neutrals and adding essences... Then got a 10l copper alembic and had a go a making vodka from honey, rum from molasses and then gin... which has become the main thing we make now (funny given that I never used to like gin).
Recently got a 50l four plate flute with carter head... Have done one batch of gin with this so far and must say it's a definite step up from what I've made in the past... Even though I was still starting with turbo sugar washes (three stripping runs and one spirit run)
Now wanting to start experimenting with things other than turbo sugar washes and eventually having a go at all grain.
