Hey there--I'm a retired Texan transplant to Costa Rica. I've been here for 10 years and have no plans to ever leave.
I live in the mountains (90% of the population live in the mountains, not the beaches, despite what you may have seen on TV) on a farm of about 4 acres. We have so many tropical fruits growing on the property that I started distilling them several years ago on a challenge from my son (who built his own still.) Previously I had only made meads, but decided to take the plunge and face his challenge.
I make several varieties of German/Austrian style schnaps using various fruits for mass. I also make vodka, and gin.(Man, gin was the most complicated for me to get right.)
I have been reading the forums off and on for a long time, and finally decided to create this profile, because I've just tried my hand a rum. (Planning on posting about it in the rum forum.)
I have a degrees in chemistry and microbiology, but never used them other than to be stepping stones to another profession. I only mention that because now, finally, they have come in handy not only with the distillations, but also because I have a small goat herd for making cheeses. (Aged European style cheeses are basically unheard of here.)
There's nothing better than to gather with friends over artisan cheeses and liquors.
