Blue berry Rye Whisky
I'm looking to make a Blueberry rye whisky. in my area we have an abondance of Blueberry farm's. i went out and bought a 5 gallon pail or 48 pints of fresh blueberries, i like the idea of adding them to a Malted rye and barley whisky. but i want the finished product to be as clear as water with all the flavor of a fresh blueberry before aging. i have a 5 gallon stainless pot still kit with a thumper and a copper condenser. can anybody give me a recipe for this and a step by step guide as to what temperature i should be cooking the mash and how long and when to add in the blueberries and weather or not i should be using amylase enzyme. fermenting and running the still i have experience with as my first run ever i ran a banana brandy and triple distilled it. i didn't get the taste profile i was looking for with the banana run hopefully better this time with some help. any help is much appreciated.
