Cherry rum
So last year I made a panela rum with molasses and oats well we had a summer lots of mojitos and there was just enough to put away and forget about. Today i cracked it open, it was good but was missing something. I decided to add a stave of ex bourbon oak and a couple of French oak chips because it definitely needs some vanilla and some structure. I am guessing it should be right as rain by July 4th

I may have forgotten to mention that when I put it away to forget I added a cherry wood stave

I imagine cherry wood would compliment rum nicely. I have enjoyed it in my corn whiskey.
