Ok I bought cracked corn. Then ran 12# ofit thru my hand crank mill to make it smaller. At 200+ cranks to the pound... oh my aching arms!).
I boiled 8# water and abt 1.5 gal backset. Added the corn while stirring. Made 12gal total. Stirred it for 30 min. At 195 Added high temp enzyme. Insulated it. Went away for an hour. Temp at 190. Added some more enzyme, stirred. Put insulation back. Returned an hour later... 180f. Failed iodine test. Insulated and left... after 8 hours waiting, still failed iodine test but was at 110F. Added low temp enzyme. Returned an hour later... failed iodine test again.
Said F it! Split into buckets, Added normal lady yeast and Yellow Lable angel yeast.
Why didn't the corn convert? (Yes, I'm a newb)
