Hi everyone
I am setting up a new fermentation tank specifically for high-gravity washes and could use some advice. I've been experimenting with different recipes, but I'm running into issues with temperature control and foaming during the fermentation process.
Currently, I am using a 20-gallon stainless steel tank with an airlock, but I am thinking of adding a temperature control system. Would a thermowell and digital controller be overkill, or is it worth the investment? Also, any tips on dealing with excessive foaming? I’ve read that anti-foam agents can help, but I'm unsure which ones are best for distilling purposes.

I use a 20 gallon SS pot for ferment. There is a tri clamp fitting with cam connector for a hose. I run the hose up over a shelf then down to floor put that end in a 20 L pail. This takes care of any puking from foam. Traps CO2 just fine. Typical brew airlocks are a PITA.
Temperature control is an old blanket if temp drops and I add a brew belt if needed. If the temp is to high I just unwrap the pot.If you use a controller what will it “control”? Heat source or cooling source?
Not sure what you are making but high gravity and rapid ferment will foam. If you are making fuel I can’t help there.

G’day. I do high-gravity ferments that foam a lot but I don’t use an air-lock, so it’s only rarely a problem. I use a loose fitting lid. Seems to be effective at letting the yeasty beasties express themselves without making a mess - the perfect teenager, really.
I could do the air-lock thing after two days, but it would be a pain. I make rum, mostly, but I do the same for brandies and bourbons. If I’m leaving the ferment for several days I’ll screw the lid on a little bit, maybe. Temperature control is how many blankets.

Set the 20-gallon stainless steel tank in a cut down plastic barrel filled with water.
That way you can heat the water or circulate cool water in the jacket.
