Got my plums picked and washed and my mash made. I made 2. 5 gallon buckets one I’m going to put Camden and yeast in one and the other one. I’m going to use the natural yeast on the fruits and see what happens.

If you are planning to distill the wine, don't use Campden tabs.
Just let it ferment and if (Or most likely when, with plums!) you see an infection start run though the still.

Welcome to the forum and hope it turns out well .
Just a small point . What you have made is called a Must .
A Mash is what you have when using grains that have to be cooked and held at temps with malt to convert starches to sugars .
And a Sugar or Molasses ready to ferment is called a Wash .
