moisture % in corn
does the corns moisture percent make a difference. I work with grain and we get corn in at 21-22% moisture should I dry it down to 15% or so prior to cracking and mashing

What equipment do you have?
Without more information, I would suggest to crack it and ferment it as soon as possible unless there is some reason why you can't crack it at 22%, I don't see any advantage to drying it to 15% then adding water.
