Fermenting time

Good morning,

I am fermentation my first sugar wash:

5 gallons of water
8 lbs of sugar (inverted)
6 oz tomato paste (nutrient)
1.25 tea of DADY

The temp has been pretty consistent around 85°F, hit day 27 yesterday, is that normal? It's that too long? How long should it typically take? Thank you for your help

Did you put yeast in?

Most ferments finish off in a week or two.

Dude, it would be helpful if you included a hydrometer reading. If you have a bubbler that’s still bubbling occasionally that doesn’t mean it’s still fermenting. You could also taste some and describe that to the team. Always fun. Distance diagnosis is tricky without handy info! Good luck out there. But yeah, 27 days is a while for that kind of wash at that temperature.

Is "tea of DADY" boiled yeast for nutrient? If so, boiled yeast amount appears correct. Your water to sugar ratio seems fine.

As asked previously, what's the Specific Gravity (hydrometer reading)? Did you pitch yeast? I see no mention of adjusting the starting PH and no mention of any source of Calcium Carbonate.

I'd check the PH. I assume you had a PH crash. If it's a PH crash, it would read 3 PH or so.

Thats how I read it too greggn.

Regarding fermentation time , I’ve had them still ticking over a month later . Unless I’m desperate , I just leave it to it .

I just finished 40 gallons of Shady's in 4 stripping batches. They all worked off in a week, then I let them sit a week before running. I adjusted the PH at the start of each and followed Shady's recipe to the letter.
