For distillers that goes beyond base spirits (whiskey, rum, brandy) and want to add flavors like gin (predistillation/distillation) or limoncello (post distillation) this is a great video. You need to understand how people perceive flavors and aromas. Arielle wrote a book "Flavorama: A Guide to Unlocking the Art and Science of Flavor." If you haven't read it you should.

There is a part about distillation and flavor compounds. It's pretty interesting.
