A still that produces a flavorful, but not extremely pure distillate. It is derived from the ancient Alembic Still. There are many designs for pot stills, from the traditional "pot" still based on an actual kettle, to the more modern pot stills which often employ two stills, one for low wines and one for spirits.
Some stills, such as Coffey stills, are a form of pot still but are designed for continuous operation.
