Also called the maguey, agave is a cactus whose fruit is used to make tequila. Out of 136 known species, 26 known sub-species, and 29 varieties of maguey in Mexico, only the blue agave (Agave Tequilana Weber Azul) is suitable for the production of tequila. All tequila made in Mexico is made in the state of Jalisco. See also pulque and mescal.
