You Have to use a mallet to hammer the Gamma lid in place then the lid will screw on/off. They cost more than the bucket but are worth it.

Re: Aging after oaking?
Whisky does not age when it is bottled, it only ages on the wood, thats what gives it character and flavor profile. When You remove from wood the aging stops. When bottled it may settle, but will not age.

Re: Oak used in Cooperages
Well and good for WINE, but not Whisky. What does Scotland use? Used American Bourbon Oak barrels. What do American Whiskey Distillers use for aging? Why it is good ole American White OAk. But you can use any wood for aging to achieve different profiles. Try Wine staves, Scotland is using French Oak...

You can buy WINE Barrel staves from Home Depot, web only, pick up in store, for about $15. You get a little bundle, then you need to cut them to whatever size you need. I have some Scotch aging on them now.

You can buy direct from JD, barrels, staves, rounds, heads or smoking chips. I found a better, cheaper place that sells JD staves cut into 3-4" peices for cooking, they cost $14.95 a bag, it weighs about 15lb, but there is no weight on bag just a total size of 959 cu ML. On Home Depot web you c...

Scotch Single Malt
I drink Single Malt Scotch and Tequila the good aged stuff not the kerosene in a bottle type. IF I have some good Corn Whiskey that is smooth I will partake. When I do have a nip, it is a dram or two about 3 or 4 times a month. I drink for the taste.

Personally my Pot still put out average 155 proof or 75 abv. I don't find it necessary to re-distill unless something taste bad or I want to achieve 90+ABV. But everyone to his own. A lot depends on whats in the Mash. I do AG or Corn/malt, no sugars. :D Have fun and Drink Responsibly and don't serve...

Try some single Malt Scotch and see if you like it, go after some Highland or Speyside area Scotch.
