seal wine airtight after racking?

My grape wine (from concentrate) is 14.5 % abv. It's been 2 1/2 weeks & I racked it into a glass carboy.(Only 2 1/2 gallons in 6 1/2 gallon carboy) Do I seal it airtight or with coffee filter while waiting a another week to have time to make brandy out of it?
One more (real dumb) question....If I decided to keep this as wine and it wasn't as sweet as I wanted, could I add a little sugar?

if you gonna charge it in a week you aint gota worry bout mother. you say it 14.5 did you sulfate it. is it sweet at all. if it is it aint all worked off yet but you can still add suger. dont put the cap on tite if you plannin on keepin it wine an addin suger cause that jug can explode.

so im tole

if it is compleatly finished fermenting you can just cap, if not shure put plastic rap on top.
if you add sugar to wine it will start fermenting agin , you whould need somthing to kill yeast like postassium sorbate/potassium metabissulfite
befor adding sugar.

(unless yeast OD on sugar)
this can be done by keep adding sugar untill the yeast dye, then sweeten

no sulfate (whatever the hell that is ..LOL). It may be just a little little on the sweet side. I am just used tto that store bought cheap crap.
Not much of a wine drinker at all. The blackberry I just had (swapped for some firewood) was damn good. B U R P !
I guess I will just do a single pot still run and call it brandy.
