Here I start in a series of seriously newbie questions:
Planning on a 15 gal SS keg.
How come I see copper coming out of the top of all of the SS kegs? Wouldn't continuing with SS be better?

Also you need some copper in the system to remove the sulphides in your distilate.

I am a certified welder with a welding shop and a TIG torch so that is not a problem.
With the 2" Sankey outlet what is the idea of stepping it up beyond that to 3,4,6" ?

The bigger diameter column, the more heat is required to produce sufficient vapour flow, bearing in mind what type of still you are building etc.

There are some beautiful SS keg/column combinations.
Have a looksee at Hookline's.
The required copper path can be in the packing, and/or the condenser(s).
