Anyone use blackberries??

Hi All

I just wondered if anyone had any experience of flavouring neutral with blackberries. The hedgerows are full of them at the moment in the UK.

I flavoured some neutral with sloes last year which turned out very very nice (I have managed to keep one bottle stashed to age for a few years hopefully).

Anyhow I really think the blackberries could work put nice but has any one here tried it? I did search and found a lot of stuff on blackberry wine but that’s not the route I want to take. I was wondering if I should try the SPD method, or do what I did with the Sloes, steep them in neutral - I'm sure it was 500g of frozen fruit+ 500g of caster sugar per 1L of neutral soaked for 3 months. Then filtered and stored in bottles for as long as I could manage!

Yup, blackberry is very yummy.

I use for 1 gallon 60% light rum 1 Kg blackberries and 500 gr. sugar.

Shake the hell out of it each day and strain after a week.

I reload it 2 times (3 gal total), mix all strains together and bring it to 30 ABV with purified water, add suger sirup if needed.
Some drops of limes juice would help to keep the color.

When you water it down try 40% ABV first, some like it stronger, like me.

But most ladies here love it at 30%.

Gonna need to try this one Joe. Brambles we call them here in Scotland.

Brambles is same thang, wild ones are even better.

I use this base receipt for many other stuff, here some pics examples: Strawberry, Cinnemon and Guayaba (my favorite).

I also use coffee beans, cacao, banana, mango and many more.

Also like to try some blending between them. :wink:

Guavaberry liquor was a sweet strong warm likker, really nice, but so drunk :twisted:

That's the one, they grow wild here, you can catch 10 fruits in the local market for 1 USD.

They are a little bigger than a goose egg.

They are used a lot for milk shakes and are very delicious with a very strong flavor.

As I said, it's my favorite, they don't color much the likker but leave A LOT of flavor.

Today setup a pineapple (was toooo cheap in the market to leave 'em there) rum with the same base. 8)

For next week I purchased ripe coconuts, that will be a nice experiment.

This might be OT, but sneak in a vanilla pod together with the cinnamon. After straining, I recycle the cinnamon sticks and vanilla pod by boiling them in cream to make ice cream.

Thanks Caprimulgus, I really like vanilla but I'd never thought of using it. I will defo give that a try. I'm running out of space, neutral, fermenting bins, kilner jars, time....its all consuming but oh so worth it.

My dad has a chunk of property loaded with them. I picked for hours last year to make a 5 gal wash. stained my hands for days. made me a 750ml of fine brandy fer all that work.
