Haven't been on here for a while, racing season is coming up quickly and still have work to do to the dragster I bought my son. Weather got warm enough to still so i ran a couple batches. Put on 4 more 30L pails to ferment...then it kind of "hit" me, it's like oil changes or planting the crops...it's just another thing to do. :problem:

I like my whisky so I haven't modified or tried anything different, just ferment, run, ferment more, run. With the roof on the church, kids piano lessons/karate/etc, working on the truck, working on my racecar and his dragster, working on several other racecars, planting the garden, being on call 24/7 with the job.....plus the honey-do list... :x

So, I make whisky, age it in glass carboys with medium toasted hungarian oak and enjoy it when I get a second. I don't even feel like I'm "moonshining" or whatever, just like making a loaf of bread, eating it, making some more. Some people go to a liquor store, I go to the garage. Lately though, I've spent whole weeks without a drink just because too much else is going on, not that that is good or bad, just an observation.

Anyway, if you wonder where I am or what I'm up to, I make some when the stock is low and enjoy it while i can. I just don't have much time to be on here helping others which I do enjoy. Speaking of which, one of the guys in my shop makes wine and dumped two 40L batches out when they went bad! I almost shit! I told him what I do and let him try some and he was very impressed. Now he wants me to teach him to make brandy with good wine and neutral with the bad. (something else to do...)
Numerous 57L kegs, some propane, one 220v electric with stilldragon controller. Keggle for all-Grain, two pot still tops for whisky, a 3" reflux with deflag for vodka. Coming up, a 4" perf plate column. Life is short, make whisky and drag race!

yup, sounds like you have a lot going on. Don't forget to prioritize what's important in your life. You only live once! Spend more time with the family, someone else can work on the church roof. The race-car and dragster will make memories that your children will cherish forever. Thats the kinda of stuff that your children will look back on and smile long after they inherit your still & cars, and will be the stories they pass on to their grandchildren about their great grandpa. IMHO
I've been really busy lately too, graduating college in december, live in girlfriend, full time job, two dogs, and all the regular stuff like the yard, dishes, the different organizations and clubs I'm a member of. It's really easy to say yes to something you like/ enjoy/ believe in but sometimes you just have to learn to say "no" even when its a good cause; I mean whats the point of living if you never get to enjoy it?

Yes and no, supposed to be posted next year so I'm stopping where I'm at for now. The posting will be in the same province so I'll still have all the contacts, numbers, etc so that's all good. Basically business plan is as far as I can get it. When I move I'm buying a farm or at least 5 acres or so and it will be a farm distillery. Looking right now in the area I'll probably be posted (cause it's near my cottage) and checking prices etc. I've decided that I'll make shnapps/vodka to get the revenue stream started and barrel as much whisky as I can. I'm thinking possibly white dog too but would rather age 2-4 years, and then have only a limited supply available to keep price up. I never ordered the bottles I was going to because it would be just more to move.

So, I'm making what I like, treating it as a "job" more than a hobby and we'll see how much fun it remains. I guess it's just because I'm so busy I haven't had the desire to experiment at all. Not even coming on the boards much either to "see what's new" as in still design or new recipes.

Keep it 'Hobby'. When it becomes 'Job' then it must pay a good income to qualify. This is regardless of licences and whatnot. If it's work then it's a job. If it's pleasure then it's a hobby. Combining Pleasure and Work is a Holy Grail complete with Roses and Thorns.

And that sure as hell is better than no plate at all.

Yeah I'll stop by when I can. Just finished talking to a guy I did some work for. (he got 627hp on dyno) told him a stock 302 block is only good for 500-550hp before it rapidly deteriorates. He bought a dart 351 block and wants me to build a 427 windsor for him. He wants 800+hp with a 70mm procharger etc. The %^&ing car isn't even on the track/road yet and he wants more power! Must be nice to have $$$ falling out your ass huh?

So anyway, I guess the whole point of this is, sometimes even a hobby gets so "familiar" it turns into just another chore. Or maybe CAN turn into a chore if you have too much going on. (or maybe too many hobbies?....hhhmmmm never thought of that until now...)

Can't think of anything else I'd want to drink though or maybe I would experiment. I'd like to do all grain, but ujsm is SO quick and easy.

So...I'll drop in and say hi when I get a second. Haven't deserted y'all, just occupied.
